Cheese risotto with bacon or chicken


This is an absolute comfort dish and I love eating this though the cooking process can be tiring. But my take on it is that by the time you are done stirring, you have burnt enough calories to not have to feel guilty about enjoying this dish :) So enjoy!

Ingredients:
60g of unsalted butter and a little extra on the side
2 tbsp of olive oil
I onion sliced finely or 2 scallions finely sliced
1/4 tsp of saffron threads soaked in a glass of white wine
Cooked chopped bacon or chicken
1/2 tsp dijon mustard(optional)- I personally leave this out bc I dont like the taste of mustard
1 cup of parmesan cheese or cheddar cheese
2 tbsp of chives
2 tbsp of parsely
250g of Arborio rice
1 litre of chicken stock(try getting low sodium option)

Put stock in a pot and simmer
Melt the butter with the oil in a pan.
Add the scallion and fry till soft.
 Add the meat bc you want this to flavour the rice. Then add the rice and fry for 1-2 mins.
Add the wine with the saffron and mustartd and stir till absorbed.
Start ladling one ladle of stock at a time into the rice and stir till absorbed before adding second ladle. Once all the stock has beeen used, take off heat add the cheese, chives and parsely and knobs of extra butter and leave it absord everything for 5 minutes before eating. Bon appetite!
